Ingredients

  • 2 cups sushi rice
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 2 eggs
  • 1 cup cucumber, thinly sliced
  • 1 cup carrot, julienned
  • 4 pieces shiitake mushrooms, cooked
  • ½ cup peas
  • 2 tablespoons pickled ginger
  • 1 teaspoon salt
  • 2 sheets nori (seaweed), cut into strips

Instructions

    Cook sushi rice according to package directions and let cool slightly.

    In a small bowl, mix rice vinegar, sugar, and salt. Pour over warm rice and fold gently to combine.

    Heat a non-stick pan and make a thin omelet with beaten eggs. Slice into strips.

    Arrange dressed rice in two bowls.

    Top each bowl artfully with cucumber, carrot, mushrooms, peas, omelet strips, pickled ginger, and nori.

    Serve immediately at room temperature.
