Ingredients

  • 300g sushi rice
  • 50ml rice vinegar
  • 2 eggs
  • 100g cucumber
  • 100g carrots
  • 50g pickled ginger
  • 50g nori seaweed
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 tbsp sesame seeds

Instructions

    Cook sushi rice according to package directions.

    While rice cooks, mix rice vinegar, sugar, and salt in a small bowl.

    Transfer cooked rice to a large bowl and gently fold in the vinegar mixture.

    Boil eggs for 7 minutes, then peel and halve them.

    Julienne cucumber and carrots into thin matchsticks.

    Divide seasoned sushi rice between two bowls.

    Arrange eggs, cucumber, carrots, pickled ginger, and nori strips on top of rice.

    Sprinkle with sesame seeds and serve at room temperature.
