Ingredients
- 300g sushi rice
- 50ml rice vinegar
- 2 eggs
- 100g cucumber
- 100g carrots
- 50g pickled ginger
- 50g nori seaweed
- 2 tbsp sugar
- 1 tsp salt
- 1 tbsp sesame seeds
Instructions

1Cook sushi rice according to package directions.

2While rice cooks, mix rice vinegar, sugar, and salt in a small bowl.

3Transfer cooked rice to a large bowl and gently fold in the vinegar mixture.

4Boil eggs for 7 minutes, then peel and halve them.

5Julienne cucumber and carrots into thin matchsticks.

6Divide seasoned sushi rice between two bowls.

7Arrange eggs, cucumber, carrots, pickled ginger, and nori strips on top of rice.

8Sprinkle with sesame seeds and serve at room temperature.
