Coronation Chicken Salad

Ingredients

  • 300g cooked chicken breast, diced
  • 3 tbsp mayonnaise
  • 1 tbsp mango chutney
  • 1 tsp curry powder
  • 1/2 small onion, finely diced
  • 50g dried apricots, chopped
  • Handful fresh lettuce leaves
  • 1 spring onion, sliced
  • To taste salt and pepper

Instructions

    Toast the curry powder gently in a dry pan for 1 minute to release its flavour, then set aside to cool.

    Mix mayonnaise with the cooled curry powder, mango chutney, and finely diced onion in a bowl.

    Fold the diced cooked chicken and chopped apricots into the curry mayonnaise mixture.

    Season with salt and pepper to taste.

    Arrange fresh lettuce leaves on plates and spoon the coronation chicken mixture on top.

    Garnish with sliced spring onion and serve immediately.
