Ingredients
- 300g cooked chicken breast, diced
- 3 tbsp mayonnaise
- 1 tbsp mango chutney
- 1 tsp curry powder
- 1/2 small onion, finely diced
- 50g dried apricots, chopped
- Handful fresh lettuce leaves
- 1 spring onion, sliced
- To taste salt and pepper
Instructions

1Toast the curry powder gently in a dry pan for 1 minute to release its flavour, then set aside to cool.

2Mix mayonnaise with the cooled curry powder, mango chutney, and finely diced onion in a bowl.

3Fold the diced cooked chicken and chopped apricots into the curry mayonnaise mixture.

4Season with salt and pepper to taste.

5Arrange fresh lettuce leaves on plates and spoon the coronation chicken mixture on top.

6Garnish with sliced spring onion and serve immediately.
