Fattoush Salad

Ingredients

  • 4 cups mixed salad greens (lettuce, arugula, endive)
  • 2 medium tomatoes, diced
  • 1 cucumber, diced
  • 4 radishes, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 pita bread, cut into triangles
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp sumac
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

    Heat olive oil in a pan and fry pita bread triangles until golden and crispy, about 3-4 minutes. Drain on paper towels.

    In a large salad bowl, combine mixed greens, tomatoes, cucumber, radishes, parsley, and mint.

    In a small bowl, whisk together lemon juice, 2 tbsp olive oil, minced garlic, sumac, salt, and pepper to make the dressing.

    Just before serving, pour dressing over the salad and toss gently.

    Top with crispy pita bread pieces and serve immediately while the pita is still crunchy.
