Fattoush Salad

Ingredients

  • 3 large tomatoes, diced
  • 1 cucumber, diced
  • 2 cups romaine lettuce, chopped
  • 1 cup radishes, sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 pita breads, fried and broken into chips
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp sumac
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

    Cut pita breads into triangles and fry in olive oil until golden and crispy, then drain on paper towels

    In a large bowl, combine tomatoes, cucumber, lettuce, radishes, parsley, and mint

    In a small bowl, whisk together olive oil, lemon juice, sumac, minced garlic, salt, and pepper

    Pour dressing over vegetables and toss gently

    Add pita chips just before serving and toss lightly to maintain crispness

    Serve immediately while pita chips are still crunchy
