Ingredients

  • 2 cups mixed lettuce, torn
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons sumac
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 pita bread, toasted and broken into chips
  • Salt and pepper to taste

Instructions

    Tear the lettuce into bite-sized pieces and place in a large bowl.

    Add cherry tomatoes, cucumber, bell pepper, parsley, and mint.

    In a small bowl, whisk together lemon juice, olive oil, minced garlic, and sumac.

    Pour dressing over vegetables and toss gently to combine.

    Top with toasted pita chips just before serving to maintain crispness.
