Ingredients

  • 4 cups mixed greens (romaine, arugula, endive)
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1/2 cup radishes, thinly sliced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, chopped
  • 1 pita bread cut into triangles and toasted
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon sumac
  • 1 clove garlic, minced
  • to taste salt and pepper

Instructions

    Whisk together olive oil, lemon juice, minced garlic, sumac, salt, and pepper to create the dressing.

    Combine all fresh greens and vegetables in a large bowl.

    Toast pita bread triangles in a dry pan until crispy, about 3-4 minutes.

    Just before serving, pour dressing over the salad and toss gently.

    Top with toasted pita chips and fresh herbs.

    Serve immediately while pita is still crispy.
