Ingredients
- 4 cups mixed greens (romaine, arugula, endive)
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 red bell pepper, sliced
- 1/2 cup radishes, thinly sliced
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 1 pita bread cut into triangles and toasted
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon sumac
- 1 clove garlic, minced
- to taste salt and pepper
Instructions

1Whisk together olive oil, lemon juice, minced garlic, sumac, salt, and pepper to create the dressing.

2Combine all fresh greens and vegetables in a large bowl.

3Toast pita bread triangles in a dry pan until crispy, about 3-4 minutes.

4Just before serving, pour dressing over the salad and toss gently.

5Top with toasted pita chips and fresh herbs.
