Ingredients
- 500g dried black beans
- 300g pork shoulder, cubed
- 200g pork ribs
- 150g bacon, diced
- 100g pork sausage, sliced
- 2 onions, diced
- 4 garlic cloves, minced
- 2 bay leaves
- 1 orange, sliced
- salt and pepper to taste
Instructions

1Soak black beans overnight, then drain and rinse thoroughly.

2In a large heavy pot, cook bacon until crispy, then set aside.

3In the same pot, brown the pork shoulder and ribs in bacon fat, then remove and set aside.

4Sauté onions and garlic until golden, then return the meat to the pot.

5Add the soaked black beans, bacon, bay leaves, and enough water to cover everything by 2 inches.

6Bring to a boil, then reduce heat and simmer covered for 2.5 hours, stirring occasionally.

7Add the pork sausage slices and continue simmering for 30 minutes until beans are very tender.

8Season with salt and pepper to taste.

9Serve in deep bowls with white rice, orange slices on the side, and farofa sprinkled on top.
