Ingredients
- 500g dried black beans
- 300g pork shoulder, cubed
- 200g pork ribs
- 200g beef brisket, cubed
- 150g Portuguese sausage, sliced
- 2 onions, diced
- 4 garlic cloves, minced
- 2 bay leaves
- 2 liters beef stock
- 2 tablespoons olive oil
- salt and black pepper to taste
Instructions

1Soak black beans in water overnight, then drain.

2Heat olive oil in a large pot and brown the pork shoulder, ribs, beef brisket, and sausage until golden on all sides.

3Remove meat and set aside. In the same pot, sauté onions and garlic until fragrant.

4Return meat to the pot, add drained beans and bay leaves.

5Pour in beef stock until everything is just covered. Bring to a boil.

6Reduce heat to low and simmer uncovered for 2-3 hours, stirring occasionally, until beans are tender and meat is fall-apart soft.

7Season with salt and black pepper to taste.

8Serve hot in deep bowls with white rice, farofa (toasted cassava flour), and orange slices on the side.
