Ingredients

  • 500 g black beans, soaked overnight
  • 300 g pork ribs
  • 200 g pork shoulder, cubed
  • 150 g smoked pork sausage, sliced
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1 orange, for serving
  • 2 tablespoons olive oil
  • salt and black pepper to taste

Instructions

    Drain soaked black beans and place in a large pot with 2 liters of water. Bring to boil and simmer for 1 hour.

    In a separate pan, heat olive oil and brown the pork ribs and shoulder on all sides. Remove and set aside.

    In the same pan, sauté onions and garlic until golden.

    Add the browned pork, sausage, and sautéed onion-garlic mixture to the bean pot.

    Add bay leaves and simmer together for 2 hours, stirring occasionally, until beans are very tender and stew becomes thick and dark.

    Season with salt and pepper to taste.

    Serve in deep bowls with white rice on the side, orange slices, and farofa (toasted cassava flour).
