Ingredients

  • 4 slices brioche bread
  • 2 eggs
  • 100 ml whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 200 g mixed fresh berries (strawberries, raspberries, blueberries)
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Pinch salt
  • Powdered sugar for dusting

Instructions

    Prepare the berry compote: Combine fresh berries, honey, and lemon juice in a small saucepan over medium heat. Simmer gently for 5-7 minutes until berries soften and release their juices. Stir occasionally and remove from heat.

    Whisk together eggs, milk, vanilla extract, cinnamon, and salt in a shallow bowl until well combined.

    Heat butter in a large skillet or griddle over medium heat until foaming.

    Dip each brioche slice into the egg mixture for about 2-3 seconds per side, ensuring it absorbs the custard but doesn't become soggy.

    Place coated brioche slices on the hot buttered skillet and cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes until crispy and golden.
