French Brioche French Toast with Berry Compote

Ingredients

  • 4 slices brioche bread
  • 2 eggs
  • 100 ml whole milk
  • 1 teaspoon vanilla extract
  • 30 g butter
  • 200 g fresh mixed berries (strawberries, raspberries, blueberries)
  • 2 tablespoons sugar
  • 1 pinch salt
  • powdered sugar for dusting

Instructions

    In a shallow bowl, whisk together eggs, milk, vanilla extract, and salt until well combined.

    In a saucepan over medium heat, combine berries with 2 tablespoons sugar and cook for 5-7 minutes, stirring occasionally, until berries release their juice and form a light compote. Remove from heat.

    Heat butter in a large skillet over medium-high heat until foaming.

    Dip each brioche slice into the egg mixture, coating both sides generously but not oversaturating.

    Place coated brioche slices in the hot butter and fry for 2-3 minutes per side until golden brown and crispy.

    Transfer French toast to serving plates, spoon warm berry compote on top, and dust with powdered sugar. Serve immediately.
