Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup whole milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 2 cups fresh spring berries (strawberries, raspberries)
  • 3 tablespoons honey
  • 1/2 cup crème fraîche

Instructions

    Mix flour and eggs in a large bowl.

    Gradually add milk and water, stirring to combine.

    Add salt and melted butter; beat until smooth.

    Heat a non-stick skillet over medium-high heat and lightly butter it.

    Pour 1/4 cup batter into the center and tilt the skillet to spread evenly.

    Cook for about 1-2 minutes until the bottom is light brown, then flip and cook the other side for 30 seconds.

    Transfer to a plate and repeat with remaining batter.

    Serve warm crêpes topped with fresh berries, a drizzle of honey, and a spoonful of crème fraîche.
