Ingredients

  • 2 cups cooked rice
  • 2 sheets roasted seaweed (nori)
  • 1 carrot, julienned
  • 1 cup spinach, blanched
  • 1 zucchini, julienned
  • 2 eggs, beaten and cooked as thin omelet
  • 4 slices pickled radish (danmuji)
  • 2 tablespoons sesame seeds
  • 2 tablespoons sesame oil
  • 1 teaspoon salt

Instructions

    Season the cooked rice with 1 tablespoon sesame oil, 1 tablespoon sesame seeds, and salt while warm.

    Blanch spinach briefly, squeeze dry, and season with sesame oil and salt.

    Prepare all vegetables: carrot, zucchini should be thinly julienned and lightly salted. Cook eggs as thin omelets and cut into strips.

    Place seaweed shiny-side down on bamboo mat. Spread a thin layer of rice evenly across the seaweed.

    Arrange vegetables, egg strips, and pickled radish in a line across the center of the rice.

    Roll tightly using the bamboo mat, sealing the edge with a few grains of rice.

    Brush the outside with sesame oil and sprinkle with sesame seeds.

    Slice with a sharp, wet knife into 6-8 pieces and serve immediately or at room temperature.
