Ingredients
- 2 cups cooked rice
- 2 sheets roasted seaweed (nori)
- 1 carrot, julienned
- 1 cup spinach, blanched
- 1 zucchini, julienned
- 2 eggs, beaten and cooked as thin omelet
- 4 slices pickled radish (danmuji)
- 2 tablespoons sesame seeds
- 2 tablespoons sesame oil
- 1 teaspoon salt
Instructions

1Season the cooked rice with 1 tablespoon sesame oil, 1 tablespoon sesame seeds, and salt while warm.

2Blanch spinach briefly, squeeze dry, and season with sesame oil and salt.

3Prepare all vegetables: carrot, zucchini should be thinly julienned and lightly salted. Cook eggs as thin omelets and cut into strips.

4Place seaweed shiny-side down on bamboo mat. Spread a thin layer of rice evenly across the seaweed.

5Arrange vegetables, egg strips, and pickled radish in a line across the center of the rice.

6Roll tightly using the bamboo mat, sealing the edge with a few grains of rice.

7Brush the outside with sesame oil and sprinkle with sesame seeds.

8Slice with a sharp, wet knife into 6-8 pieces and serve immediately or at room temperature.
