Greek Honey Walnut Pastry (Karioka)

Ingredients

  • 200 grams phyllo dough sheets
  • 150 grams walnuts, finely chopped
  • 100 grams butter, melted
  • 75 grams honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground clove
  • 2 tablespoons sugar
  • 1 orange, zest only
  • 1 pinch of sea salt

Instructions

    Preheat oven to 350°F (175°C). Toast the chopped walnuts in a dry pan for 3-4 minutes until fragrant, then mix with cinnamon, clove, sugar, orange zest, and salt.

    Brush a baking sheet with melted butter. Layer 4-5 sheets of phyllo dough, brushing each sheet generously with butter.

    Sprinkle half of the walnut mixture evenly over the phyllo. Layer 4-5 more phyllo sheets with butter between each sheet.

    Add remaining walnut mixture, then top with final 4-5 phyllo sheets, buttering each layer.

    Using a sharp knife, cut the pastry into diagonal strips or diamond shapes without cutting all the way through.

    Bake for 18-20 minutes until golden brown and crispy.

    While pastry bakes, gently warm the honey in a small saucepan (do not boil). Once pastry is done, immediately drizzle warm honey over it.

    Let cool for 5 minutes before serving warm with Greek yogurt on the side if desired.
