Greek Salad with Feta and Olives

Ingredients

  • 3 medium tomatoes, cut into wedges
  • 1 cucumber, sliced
  • 1 red bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 200g Feta cheese, cubed
  • 100g Kalamata olives
  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 pinch of sea salt and black pepper

Instructions

    Combine tomatoes, cucumber, bell pepper, and red onion in a large bowl.

    Add Kalamata olives and gently toss.

    In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.

    Pour dressing over the salad and toss gently to combine.

    Top with cubed feta cheese and serve immediately.
