Ingredients
- 500 g fresh spinach, chopped
- 200 g feta cheese, crumbled
- 1 onion, finely diced
- 2 eggs
- 8 sheets phyllo dough
- 100 ml olive oil
- 2 tbsp fresh dill
- 1 tsp salt
- 0.5 tsp black pepper
Instructions

1Heat 2 tbsp olive oil in a large pan and sauté the diced onion until softened.

2Add the chopped spinach and cook until wilted, about 5 minutes. Remove from heat and let cool slightly.

3In a bowl, combine the cooked spinach mixture with crumbled feta cheese, eggs, fresh dill, salt, and pepper.

4Preheat oven to 180°C (350°F). Brush a baking dish with olive oil.

5Layer 4 phyllo sheets in the baking dish, brushing each sheet generously with olive oil.

6Spread the spinach and feta filling evenly over the phyllo layers.

7Layer the remaining 4 phyllo sheets on top, brushing each with olive oil.

8Bake for 25-30 minutes until the pastry is golden brown and crispy.

9Cool for 5 minutes before cutting into squares and serving warm.
