Greek Spinach and Feta Pie

Ingredients

  • 500 g fresh spinach, chopped
  • 200 g feta cheese, crumbled
  • 1 onion, finely diced
  • 2 eggs
  • 8 sheets phyllo dough
  • 100 ml olive oil
  • 2 tbsp fresh dill
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    Heat 2 tbsp olive oil in a large pan and sauté the diced onion until softened.

    Add the chopped spinach and cook until wilted, about 5 minutes. Remove from heat and let cool slightly.

    In a bowl, combine the cooked spinach mixture with crumbled feta cheese, eggs, fresh dill, salt, and pepper.

    Preheat oven to 180°C (350°F). Brush a baking dish with olive oil.

    Layer 4 phyllo sheets in the baking dish, brushing each sheet generously with olive oil.

    Spread the spinach and feta filling evenly over the phyllo layers.

    Layer the remaining 4 phyllo sheets on top, brushing each with olive oil.

    Bake for 25-30 minutes until the pastry is golden brown and crispy.

    Cool for 5 minutes before cutting into squares and serving warm.
