Greek Spinach and Feta Pie

Ingredients

  • 6 sheets phyllo dough
  • 500g fresh spinach
  • 200g feta cheese
  • 1 medium onion
  • 2 eggs
  • 100ml olive oil
  • 1 tsp dried dill
  • Salt and pepper to taste

Instructions

    Preheat oven to 180°C (350°F). Finely chop the spinach and onion.

    Sauté spinach and onion in olive oil until softened, about 5 minutes. Cool slightly.

    Crumble feta cheese and mix with spinach, beaten eggs, dill, salt, and pepper.

    Brush a baking dish with olive oil. Layer 3 sheets of phyllo, brushing each with oil.

    Spread spinach-feta mixture evenly over phyllo base.

    Top with remaining 3 phyllo sheets, brushing each with oil. Score into squares.

    Bake for 25-30 minutes until golden brown and crispy.

    Cool for 5 minutes before serving warm.
