Greek Spinach and Feta Pie

Ingredients

  • 500 g fresh spinach, chopped
  • 200 g feta cheese, crumbled
  • 8 sheets phyllo dough
  • 3 tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 tablespoon fresh dill
  • salt and pepper to taste

Instructions

    Heat 1 tablespoon olive oil in a large pan and sauté the onion and garlic until softened, about 3 minutes.

    Add the chopped spinach and cook until wilted and excess moisture has evaporated, about 5 minutes.

    Remove from heat and let cool slightly, then mix in the crumbled feta cheese, eggs, fresh dill, salt, and pepper.

    Preheat oven to 180°C (350°F).

    Brush a baking dish with olive oil and layer 4 sheets of phyllo dough, brushing each sheet lightly with olive oil.

    Spread the spinach and feta filling evenly over the phyllo layers.

    Top with the remaining 4 phyllo sheets, brushing each with olive oil and tucking edges down the sides.

    Score the top layer gently into portions with a sharp knife.

    Bake for 25-30 minutes until the phyllo is golden brown and crispy.

    Cool for 5 minutes, cut into pieces, and serve warm.
