Ingredients
- 500 g fresh spinach, chopped
- 200 g feta cheese, crumbled
- 8 sheets phyllo dough
- 3 tablespoons olive oil
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 2 eggs
- 1 tablespoon fresh dill
- salt and pepper to taste
Instructions

1Heat 1 tablespoon olive oil in a large pan and sauté the onion and garlic until softened, about 3 minutes.

2Add the chopped spinach and cook until wilted and excess moisture has evaporated, about 5 minutes.

3Remove from heat and let cool slightly, then mix in the crumbled feta cheese, eggs, fresh dill, salt, and pepper.

4Preheat oven to 180°C (350°F).

5Brush a baking dish with olive oil and layer 4 sheets of phyllo dough, brushing each sheet lightly with olive oil.

6Spread the spinach and feta filling evenly over the phyllo layers.

7Top with the remaining 4 phyllo sheets, brushing each with olive oil and tucking edges down the sides.

8Score the top layer gently into portions with a sharp knife.

9Bake for 25-30 minutes until the phyllo is golden brown and crispy.

10Cool for 5 minutes, cut into pieces, and serve warm.
