Greek Spinach and Feta Pie

Ingredients

  • 500 g fresh spinach, chopped
  • 200 g feta cheese, crumbled
  • 1 onion, finely diced
  • 2 eggs
  • 8 phyllo sheets
  • 100 ml olive oil
  • 1 tsp dried dill
  • Salt and pepper to taste

Instructions

    Heat 2 tablespoons of olive oil in a pan and sauté the diced onion until soft.

    Add chopped spinach and cook for 5 minutes until wilted, then remove from heat.

    In a bowl, mix the cooked spinach with crumbled feta cheese, 1 beaten egg, dill, salt, and pepper.

    Preheat oven to 180°C (350°F). Brush a baking sheet with olive oil.

    Layer 4 phyllo sheets on the baking sheet, brushing each with olive oil.

    Spread the spinach-feta filling evenly over the phyllo sheets.

    Layer remaining 4 phyllo sheets on top, brushing each with olive oil.

    Beat the second egg with 1 tablespoon water and brush over the top layer.

    Bake for 25-30 minutes until golden brown and crispy.

    Cool for 5 minutes, cut into squares, and serve warm.
