Ingredients
- 500 g fresh spinach, chopped
- 200 g feta cheese, crumbled
- 1 onion, finely diced
- 2 eggs
- 8 phyllo sheets
- 100 ml olive oil
- 1 tsp dried dill
- Salt and pepper to taste
Instructions

1Heat 2 tablespoons of olive oil in a pan and sauté the diced onion until soft.

2Add chopped spinach and cook for 5 minutes until wilted, then remove from heat.

3In a bowl, mix the cooked spinach with crumbled feta cheese, 1 beaten egg, dill, salt, and pepper.

4Preheat oven to 180°C (350°F). Brush a baking sheet with olive oil.

5Layer 4 phyllo sheets on the baking sheet, brushing each with olive oil.

6Spread the spinach-feta filling evenly over the phyllo sheets.

7Layer remaining 4 phyllo sheets on top, brushing each with olive oil.

8Beat the second egg with 1 tablespoon water and brush over the top layer.

9Bake for 25-30 minutes until golden brown and crispy.

10Cool for 5 minutes, cut into squares, and serve warm.
