Greek Spinach and Feta Pie

Ingredients

  • 400 g fresh spinach, chopped
  • 200 g feta cheese, crumbled
  • 3 eggs
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 6 sheets phyllo pastry
  • 3 tablespoons melted butter
  • salt and pepper to taste
  • pinch nutmeg

Instructions

    Heat olive oil in a large pan and sauté the chopped onion until translucent.

    Add the fresh spinach and cook for 5-7 minutes until wilted and excess moisture is released.

    Remove from heat and let cool slightly, then mix in crumbled feta cheese.

    In a bowl, beat the eggs with salt, pepper, and nutmeg, then fold into the spinach mixture.

    Preheat oven to 180°C (350°F). Brush a baking pan with melted butter.

    Layer 3 sheets of phyllo pastry in the pan, brushing each sheet with melted butter.

    Spread the spinach and feta filling evenly over the phyllo base.

    Top with remaining 3 sheets of phyllo, brushing each with melted butter.

    Score the top lightly into portions and bake for 25-30 minutes until golden and crispy.

    Cool for 5 minutes before serving warm.
