Ingredients
- 400 g fresh spinach, chopped
- 200 g feta cheese, crumbled
- 3 eggs
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 6 sheets phyllo pastry
- 3 tablespoons melted butter
- salt and pepper to taste
- pinch nutmeg
Instructions

1Heat olive oil in a large pan and sauté the chopped onion until translucent.

2Add the fresh spinach and cook for 5-7 minutes until wilted and excess moisture is released.

3Remove from heat and let cool slightly, then mix in crumbled feta cheese.

4In a bowl, beat the eggs with salt, pepper, and nutmeg, then fold into the spinach mixture.

5Preheat oven to 180°C (350°F). Brush a baking pan with melted butter.

6Layer 3 sheets of phyllo pastry in the pan, brushing each sheet with melted butter.

7Spread the spinach and feta filling evenly over the phyllo base.

8Top with remaining 3 sheets of phyllo, brushing each with melted butter.

9Score the top lightly into portions and bake for 25-30 minutes until golden and crispy.

10Cool for 5 minutes before serving warm.
