- 4 eggs
- 1 carrot, finely diced
- 1/4 zucchini, finely diced
- 2 tablespoons minced ham or diced spring vegetables
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1 teaspoon sesame oil
- 2 teaspoons vegetable oil for cooking
Instructions

1Beat eggs in a bowl with salt and white pepper until well combined.

2Heat a non-stick pan over medium heat and lightly oil it.

3Pour half the beaten egg mixture into the pan, tilting to spread evenly into a thin rectangular sheet.

4When the egg is set but still slightly moist on top, sprinkle the diced vegetables and ham in a line across the center.

5Using a spatula, carefully roll the omelet tightly from one end to the other.

6Transfer to a cutting board and let cool slightly, then slice into 1-inch pieces.

7Repeat with remaining egg mixture and filling.

8Arrange on a plate and drizzle with sesame oil.
