Ingredients

  • 4 eggs
  • 1 carrot, finely diced
  • 1/4 zucchini, finely diced
  • 2 tablespoons minced ham or diced spring vegetables
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 teaspoon sesame oil
  • 2 teaspoons vegetable oil for cooking

Instructions

    Beat eggs in a bowl with salt and white pepper until well combined.

    Heat a non-stick pan over medium heat and lightly oil it.

    Pour half the beaten egg mixture into the pan, tilting to spread evenly into a thin rectangular sheet.

    When the egg is set but still slightly moist on top, sprinkle the diced vegetables and ham in a line across the center.

    Using a spatula, carefully roll the omelet tightly from one end to the other.

    Transfer to a cutting board and let cool slightly, then slice into 1-inch pieces.
