Jok Gai (Thai Rice Porridge with Chicken)

Ingredients

  • 1 cup jasmine rice
  • 4 cups chicken broth
  • 200g chicken breast, shredded
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp fish sauce
  • 1 tsp white pepper
  • 3 tbsp fried shallots
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp sesame oil
  • 2 green onions, sliced

Instructions

    Rinse jasmine rice under cold water until water runs clear.

    Heat chicken broth in a large pot and bring to a boil.

    Add rinsed rice and reduce heat to low, stirring occasionally.

    Simmer for 15-18 minutes until rice breaks down and becomes creamy, stirring frequently to prevent sticking.

    Add minced garlic and ginger during the last 5 minutes of cooking.

    Stir in shredded chicken and fish sauce, cooking until chicken is heated through.

    Season with white pepper to taste.

    Pour into bowls and top with fried shallots, fresh cilantro, green onions, and a drizzle of sesame oil.
