Ingredients
- 1 cup jasmine rice
- 4 cups chicken broth
- 200g chicken breast, shredded
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp fish sauce
- 1 tsp white pepper
- 3 tbsp fried shallots
- 2 tbsp fresh cilantro, chopped
- 1 tbsp sesame oil
- 2 green onions, sliced
Instructions

1Rinse jasmine rice under cold water until water runs clear.

2Heat chicken broth in a large pot and bring to a boil.

3Add rinsed rice and reduce heat to low, stirring occasionally.

4Simmer for 15-18 minutes until rice breaks down and becomes creamy, stirring frequently to prevent sticking.

5Add minced garlic and ginger during the last 5 minutes of cooking.

6Stir in shredded chicken and fish sauce, cooking until chicken is heated through.

7Season with white pepper to taste.

8Pour into bowls and top with fried shallots, fresh cilantro, green onions, and a drizzle of sesame oil.
