Ingredients
- 1 cup jasmine rice
- 200g chicken breast, diced
- 6 cups chicken broth
- 3 slices fresh ginger
- 2 cloves garlic, minced
- 3 tbsp fish sauce
- 1 tbsp vegetable oil
- 2 stalks green onion, chopped
- 2 tbsp fried shallots
- fresh cilantro for garnish
Instructions

1Rinse jasmine rice under cold water until water runs clear.

2Heat oil in a large pot over medium heat and sauté garlic and ginger until fragrant, about 1 minute.

3Add diced chicken and cook until no longer pink, about 3 minutes.

4Add rice and stir constantly for 2 minutes to lightly toast.

5Pour in chicken broth and bring to a boil, then reduce heat to low.

6Simmer uncovered for 15-20 minutes, stirring occasionally, until rice breaks down and becomes creamy.

7Add fish sauce and stir well.

8Ladle into bowls and top with green onion, fried shallots, and fresh cilantro.

9Serve hot with soy sauce and white pepper on the side.
