Ingredients
- 3 eggs
- 1 cup cooked rice
- 1 carrot, julienned
- 1 cup fresh spinach
- 2 sheets gim (seaweed)
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp salt
- 1 tsp sugar
Instructions

1Blanch spinach briefly, squeeze dry, and season with 1 tbsp sesame oil and salt.

2Quickly sauté carrot strips until tender-crisp, season lightly.

3Beat eggs with salt and sugar, cook in a non-stick pan as a thin, flat omelette.

4Place warm rice in center of omelette, add spinach and carrot in a line.

5Roll tightly, sealing the edge with a little beaten egg.

6Brush exterior with sesame oil, slice into pieces and serve immediately.
