Korean Egg Roll Kimbap

Ingredients

  • 3 eggs
  • 1 cup cooked rice
  • 1 carrot, julienned
  • 1 cup fresh spinach
  • 2 sheets gim (seaweed)
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp sugar

Instructions

    Blanch spinach briefly, squeeze dry, and season with 1 tbsp sesame oil and salt.

    Quickly sauté carrot strips until tender-crisp, season lightly.

    Beat eggs with salt and sugar, cook in a non-stick pan as a thin, flat omelette.

    Place warm rice in center of omelette, add spinach and carrot in a line.

    Roll tightly, sealing the edge with a little beaten egg.

    Brush exterior with sesame oil, slice into pieces and serve immediately.
