Ingredients
- 500 g all-purpose flour
- 250 ml warm water
- 7 g instant yeast
- 5 g salt
- 15 ml olive oil
- 4 tbsp za'atar (thyme blend)
- 3 tbsp extra virgin olive oil for topping
Instructions

1Mix warm water with instant yeast and let sit for 5 minutes until foamy.

2In a large bowl, combine flour and salt. Add the yeast mixture and 15 ml olive oil.

3Knead for 8-10 minutes until smooth and elastic. Let rise for 30 minutes (can be done ahead).

4Divide dough into 4 equal portions and roll out into thin oval or rectangular shapes.

5Mix za'atar with 3 tbsp extra virgin olive oil to create a paste.

6Spread the za'atar mixture generously over each dough piece.

7Bake on a preheated baking sheet at 200°C (400°F) for 10-12 minutes until golden and crispy.

8Serve warm, optionally with labneh or fresh cucumber slices on the side.
