Instructions

1Mix flour and salt in a large bowl. Create a well in the center and gradually add warm water and olive oil, mixing until a soft dough forms.

2Knead the dough for 5-7 minutes until smooth and elastic. Cover with a damp cloth and let rest for 10 minutes.

3Combine dried thyme, sesame seeds, and extra virgin olive oil in a small bowl to make the manakish spread.

4Divide dough into 4 equal portions and roll each into a thin oval shape about 8 inches long.

5Spread the thyme mixture generously over each piece of dough, distributing evenly.

6Heat a griddle or large skillet over medium-high heat. Carefully transfer manakish to the hot griddle.

7Cook for 2-3 minutes until the bottom is golden and crispy, then flip and cook the other side for another 1-2 minutes.

8Serve hot and crispy, optionally sprinkled with sumac for extra tang.
