Manakish with Thyme and Olive Oil

Manakish with Thyme and Olive Oil

🟡 Medium

Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons dried thyme
  • 3 tablespoons sesame seeds
  • 4 tablespoons extra virgin olive oil
  • 1/2 teaspoon sumac (optional)

Instructions

  1. 1
Mix flour and salt in a large bowl. Create a well in the center and gradually add warm water and olive oil, mixing until a soft dough forms.
  2. 2
Knead the dough for 5-7 minutes until smooth and elastic. Cover with a damp cloth and let rest for 10 minutes.
  3. 3
Combine dried thyme, sesame seeds, and extra virgin olive oil in a small bowl to make the manakish spread.
  4. 4
Divide dough into 4 equal portions and roll each into a thin oval shape about 8 inches long.
  5. 5
Spread the thyme mixture generously over each piece of dough, distributing evenly.
  6. 6
Heat a griddle or large skillet over medium-high heat. Carefully transfer manakish to the hot griddle.
  7. 7
Cook for 2-3 minutes until the bottom is golden and crispy, then flip and cook the other side for another 1-2 minutes.
  8. 8
Serve hot and crispy, optionally sprinkled with sumac for extra tang.
