Ingredients

  • 500 g all-purpose flour
  • 250 ml warm water
  • 7 g instant yeast
  • 5 g salt
  • 30 ml olive oil
  • 100 g zaatar spice blend
  • 60 ml olive oil (for topping)
  • optional: 150 g white cheese (akkawi or feta)

Instructions

    Mix flour, yeast, and salt in a bowl. Add warm water and olive oil, knead until smooth dough forms. Let rise for 1 hour until doubled.

    Divide dough into 4 equal portions. Roll each into a thin oval or round shape, about 0.5 cm thick.

    Mix zaatar with olive oil to create a paste. Spread generously over each dough piece.

    Add cheese crumbles if desired. Place on a hot baking tray or cast iron skillet.

    Bake at 200°C for 8-10 minutes until golden and crispy, or pan-fry for 3-4 minutes per side.

    Serve warm, folded or cut into pieces, with fresh tomatoes, cucumbers, and labneh.
