Ingredients
- 500 g all-purpose flour
- 250 ml warm water
- 7 g instant yeast
- 5 g salt
- 30 ml olive oil
- 100 g zaatar spice blend
- 60 ml olive oil (for topping)
- optional: 150 g white cheese (akkawi or feta)
Instructions

1Mix flour, yeast, and salt in a bowl. Add warm water and olive oil, knead until smooth dough forms. Let rise for 1 hour until doubled.

2Divide dough into 4 equal portions. Roll each into a thin oval or round shape, about 0.5 cm thick.

3Mix zaatar with olive oil to create a paste. Spread generously over each dough piece.

4Add cheese crumbles if desired. Place on a hot baking tray or cast iron skillet.

5Bake at 200°C for 8-10 minutes until golden and crispy, or pan-fry for 3-4 minutes per side.

6Serve warm, folded or cut into pieces, with fresh tomatoes, cucumbers, and labneh.
