Ingredients
- 500g all-purpose flour
- 250ml warm water
- 7g instant yeast
- 5g salt
- 15ml olive oil
- 4 tbsp za'atar spice blend
- 3 tbsp extra virgin olive oil for topping
- 1 fresh lemon
Instructions

1Mix flour, yeast, and salt in a large bowl.

2Add warm water and olive oil, knead until smooth dough forms (about 8 minutes).

3Let dough rest for 10 minutes covered with a damp cloth.

4Divide dough into 4 equal portions and shape into balls.

5Roll each ball into a thin oval about 5mm thick.

6Mix za'atar with extra virgin olive oil to form a paste.

7Spread za'atar mixture evenly over each manakish.

8Heat a skillet or griddle over medium-high heat and cook each manakish for 2-3 minutes per side until golden and crispy.

9Serve hot with fresh lemon wedges and warm tea.
