Ingredients

  • 1 cup rice
  • 1/4 cup urad dal (split black gram)
  • 1/2 tsp fenugreek seeds
  • 2 medium potatoes
  • 1 onion
  • 2 green chilies
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 10-12 curry leaves
  • 1/2 tsp turmeric powder
  • salt to taste salt
  • 2 tbsp oil

Instructions

    Soak rice, urad dal, and fenugreek seeds in water for 4-6 hours

    Grind the soaked mixture into a smooth fermented batter, let it ferment overnight

    Boil and mash potatoes, dice onions and green chilies
  4. 4
    Heat oil in a pan, add mustard seeds, cumin seeds, and curry leaves until they splutter

    Add diced onions and green chilies, cook until softened

    Add mashed potatoes, turmeric powder, and salt; mix well to create the filling

    Heat a non-stick griddle, spread dosa batter thinly in a circular shape

    Drizzle oil around the edges, cook until golden and crispy on both sides

    Add potato filling to one half, fold the dosa, and serve hot
