Ingredients
- 1 cup rice
- 1/4 cup urad dal (split black gram)
- 1/2 tsp fenugreek seeds
- 2 medium potatoes
- 1 onion
- 2 green chilies
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 10-12 curry leaves
- 1/2 tsp turmeric powder
- salt to taste salt
- 2 tbsp oil
Instructions

1Soak rice, urad dal, and fenugreek seeds in water for 4-6 hours

2Grind the soaked mixture into a smooth fermented batter, let it ferment overnight

3Boil and mash potatoes, dice onions and green chilies

4Heat oil in a pan, add mustard seeds, cumin seeds, and curry leaves until they splutter

5Add diced onions and green chilies, cook until softened

6Add mashed potatoes, turmeric powder, and salt; mix well to create the filling

7Heat a non-stick griddle, spread dosa batter thinly in a circular shape

8Drizzle oil around the edges, cook until golden and crispy on both sides

9Add potato filling to one half, fold the dosa, and serve hot
