Ingredients
- 2 cups dosa batter (rice and urad dal)
- 4 medium potatoes, boiled and cubed
- 1 large onion, finely chopped
- 2 tablespoons oil or ghee
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 2-3 green chilies, minced
- 1 teaspoon ginger, minced
- 1/2 teaspoon turmeric powder
- salt to taste
- fresh curry leaves
Instructions

1Heat 1 tablespoon oil in a pan. Add mustard seeds and urad dal, let them splutter.

2Add onions, green chilies, and ginger. Sauté until onions turn golden.

3Add boiled potatoes, turmeric powder, and salt. Mix well and cook for 2-3 minutes. Set aside.

4Heat a non-stick griddle (tawa) over medium-high heat and grease lightly.

5Pour 1/2 cup dosa batter onto the griddle and spread in a circular motion to form a thin crepe.

6Cook until the bottom is golden and crispy (about 2 minutes), then flip gently.

7Place a spoonful of potato filling in the center and fold the dosa in half.

8Transfer to a serving plate and serve hot with coconut chutney and sambar.
