Ingredients

  • 4 eggs
  • 2 medium tomatoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (optional)
  • salt and black pepper to taste
  • fresh parsley for garnish

Instructions

    Add diced bell peppers and cook for another 3-4 minutes.

    Stir in diced tomatoes and cook for 2-3 minutes until they begin to release their juices.

    Crack eggs directly into the skillet and gently stir to combine with the vegetables, breaking the yolks slightly.

    Cook for 3-4 minutes, stirring occasionally, until eggs are set but still slightly creamy.
