Ingredients

  • 3 eggs
  • 1 medium tomato, diced
  • 1 green bell pepper, diced
  • 1 small onion, thinly sliced
  • 2 tablespoons butter or olive oil
  • 1 clove garlic, minced
  • to taste salt and black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped

Instructions

    Heat butter or olive oil in a wide skillet over medium heat.

    Add the sliced onions and sauté for 2-3 minutes until softened.

    Add the diced bell pepper and minced garlic, cooking for another 2 minutes.

    Add the diced tomatoes and red pepper flakes, stirring well. Cook for 3-4 minutes until tomatoes begin to release their juices.

    Create a well in the center and crack the eggs directly into the skillet.

    Gently stir the eggs into the vegetable mixture, breaking up the yolks and incorporating them throughout.

    Cook for 3-4 minutes, stirring occasionally, until eggs are just set but still slightly creamy.

    Season with salt and pepper to taste.

    Transfer to a serving plate and garnish with fresh parsley.
