Ingredients

  • 3 large eggs
  • 1 medium tomato, diced
  • 1 medium red or green bell pepper, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

    Heat butter or olive oil in a large skillet over medium heat.

    Add chopped onion and garlic, sauté for 2-3 minutes until fragrant and softened.

    Add diced bell pepper and cook for another 3-4 minutes, stirring occasionally.

    Add diced tomato and cook for 2 minutes to release the juices.

    In a small bowl, beat the eggs with salt, pepper, and red pepper flakes.

    Pour the beaten eggs into the skillet and gently stir until the eggs are cooked through but still slightly creamy, about 3-4 minutes.

    Remove from heat and garnish with fresh parsley.

    Serve immediately with warm crusty bread or pita.
