Ingredients

  • 4 eggs
  • 2 medium tomatoes, diced
  • 1 red bell pepper, chopped
  • 1 onion, diced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • Fresh parsley or dill (optional garnish)

Instructions

    Melt butter in a large skillet over medium heat.

    Add diced onions and cook for 2-3 minutes until softened.

    Add chopped bell peppers and cook for another 3-4 minutes.

    Add diced tomatoes and cook until they release their juices, about 4-5 minutes.

    Season with salt, pepper, and red pepper flakes if desired.

    Pour beaten eggs into the skillet and stir gently, scrambling until eggs are cooked through but still soft, about 3-4 minutes.
