- 4 eggs
- 2 medium tomatoes, diced
- 1 red bell pepper, chopped
- 1 onion, diced
- 2 tablespoons butter

Instructions

1Melt butter in a large skillet over medium heat.

2Add diced onions and cook for 2-3 minutes until softened.

3Add chopped bell peppers and cook for another 3-4 minutes.

4Add diced tomatoes and cook until they release their juices, about 4-5 minutes.

5Season with salt, pepper, and red pepper flakes if desired.

6Pour beaten eggs into the skillet and stir gently, scrambling until eggs are cooked through but still soft, about 3-4 minutes.

7Transfer to a serving plate and garnish with fresh herbs if desired.
