Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 red onion, finely diced
  • 1/4 cucumber, diced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cumin
  • to taste salt and pepper

Instructions

    Rinse and drain the canned chickpeas thoroughly.

    In a large bowl, combine chickpeas, cherry tomatoes, red onion, and cucumber.

    Add the fresh parsley and cilantro to the bowl.

    In a small bowl, whisk together olive oil, lemon juice, ground cumin, salt, and pepper.

    Pour the dressing over the salad and toss gently until well combined.
