Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 1 medium butternut squash, cubed
- 1 medium red bell pepper, diced
- 1 small red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions

1Preheat oven to 200°C (400°F). Toss butternut squash cubes with 1 tablespoon olive oil, salt, and pepper.

2Roast squash for 20 minutes until tender and lightly caramelized.

3While squash roasts, whisk together remaining olive oil, lemon juice, cumin, paprika, salt, and pepper in a large bowl.

4Add chickpeas, roasted squash, bell pepper, and red onion to the dressing. Toss gently to combine.

5Stir in fresh cilantro and mint just before serving.

6Divide between bowls and serve at room temperature or slightly warm.
