Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, thinly sliced
- 1 handful fresh cilantro, chopped
- 1 handful fresh parsley, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon paprika
- salt and pepper to taste
Instructions

1In a large bowl, combine the drained chickpeas with the diced cucumber, tomatoes, and red onion.

3In a small bowl, whisk together the olive oil, lemon juice, cumin, and paprika.
