Moroccan Chickpea and Vegetable Salad

Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1 handful fresh cilantro, chopped
  • 1 handful fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • salt and pepper to taste

Instructions

    In a large bowl, combine the drained chickpeas with the diced cucumber, tomatoes, and red onion.

    Add the fresh cilantro and parsley to the bowl.

    In a small bowl, whisk together the olive oil, lemon juice, cumin, and paprika.

    Pour the dressing over the salad and toss gently to combine.
