Moroccan Tomato and Chickpea Salad

Ingredients

  • 400g canned chickpeas, drained and rinsed
  • 3 ripe tomatoes, diced
  • 1 red onion, finely chopped
  • 1 bunch fresh cilantro, chopped
  • 1 bunch fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

    Combine the drained chickpeas with diced tomatoes and chopped red onion in a large bowl.

    Add the fresh cilantro and parsley to the mixture.

    In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
