Ingredients
- 400g beef chuck, sliced thin
- 4 medium potatoes, cubed
- 2 large onions, sliced
- 2 carrots carrots, sliced
- 3 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 2 cups beef or dashi stock
- 1 tbsp vegetable oil
- to taste salt and pepper
Instructions

1Heat vegetable oil in a large pot or Dutch oven over medium-high heat.

2Add sliced beef and cook until browned on both sides, about 3-4 minutes. Remove and set aside.

3In the same pot, add sliced onions and cook until softened, about 3 minutes.

4Add cubed potatoes and sliced carrots, stirring to combine.

5Return beef to the pot and add stock, soy sauce, mirin, sake, and sugar.

6Bring to a boil, then reduce heat to low and simmer covered for 25-30 minutes until potatoes are tender.

7Season with salt and pepper to taste. Serve hot in bowls with the broth.
