Panzanella – Tuscan Bread Salad

Ingredients

  • 400g day-old Italian bread, cubed
  • 500g ripe tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 100g fresh basil leaves
  • 100ml extra virgin olive oil
  • 30ml red wine vinegar
  • to taste sea salt and black pepper

Instructions

    Lightly toast the bread cubes in a dry pan until just golden, about 3-4 minutes

    In a large bowl, combine tomatoes, cucumber, red onion, and most of the basil

    Add the toasted bread cubes to the vegetable mixture

    Drizzle with olive oil and vinegar, season with salt and pepper

    Toss gently and let sit for 10 minutes to allow flavors to meld

    Garnish with remaining fresh basil leaves and serve at room temperature
