Ingredients
- 400g day-old Italian bread, cubed
- 500g ripe tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 100g fresh basil leaves
- 100ml extra virgin olive oil
- 30ml red wine vinegar
- to taste sea salt and black pepper
Instructions

1Lightly toast the bread cubes in a dry pan until just golden, about 3-4 minutes

2In a large bowl, combine tomatoes, cucumber, red onion, and most of the basil

3Add the toasted bread cubes to the vegetable mixture

4Drizzle with olive oil and vinegar, season with salt and pepper

5Toss gently and let sit for 10 minutes to allow flavors to meld

6Garnish with remaining fresh basil leaves and serve at room temperature
