Ingredients

  • 1 cup tapioca starch
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 2 eggs
  • 1.5 cups shredded Minas cheese or Parmesan

Instructions

    Preheat oven to 350°F (175°C) and lightly grease a muffin tin

    Heat milk and oil together in a saucepan until steaming

    Pour the hot milk mixture into a blender with tapioca starch and salt

    Blend for about 1 minute until smooth

    Allow mixture to cool slightly, then add eggs and blend until combined

    Transfer to a bowl and fold in the shredded cheese gently

    Spoon the batter into muffin cups, filling about three-quarters full

    Bake for 20-25 minutes until golden brown and slightly puffed

    Remove from oven and let cool for 2-3 minutes before serving warm
