- 1 cup tapioca starch
- 1 cup whole milk
- 1/2 cup vegetable oil
- 1 teaspoon salt
- 2 eggs
- 1.5 cups shredded Minas cheese or Parmesan
Instructions

1Preheat oven to 350°F (175°C) and lightly grease a muffin tin

2Heat milk and oil together in a saucepan until steaming

3Pour the hot milk mixture into a blender with tapioca starch and salt

4Blend for about 1 minute until smooth

5Allow mixture to cool slightly, then add eggs and blend until combined

6Transfer to a bowl and fold in the shredded cheese gently

7Spoon the batter into muffin cups, filling about three-quarters full

8Bake for 20-25 minutes until golden brown and slightly puffed

9Remove from oven and let cool for 2-3 minutes before serving warm
