- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons salt
- 2 cups tapioca starch
- 2 eggs
- 2 cups grated Parmesan cheese
Instructions

1Preheat oven to 375°F (190°C) and grease a muffin tin or place parchment paper on a baking sheet.

2In a saucepan, heat milk, oil, and salt until steaming but not boiling.

3Pour hot mixture into a blender or food processor.

4Add tapioca starch and blend until completely smooth, about 1-2 minutes.

5Add eggs one at a time, blending well after each addition.

6Fold in the grated Parmesan cheese until evenly distributed.

7Spoon batter into prepared muffin cups or onto baking sheet, filling about 3/4 full.

8Bake for 20-25 minutes until golden brown and puffy.

9Remove from oven and cool for 2-3 minutes before serving warm.
