Ingredients

  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons salt
  • 2 cups tapioca starch
  • 2 eggs
  • 2 cups grated Parmesan cheese

Instructions

    Preheat oven to 375°F (190°C) and grease a muffin tin or place parchment paper on a baking sheet.

    In a saucepan, heat milk, oil, and salt until steaming but not boiling.

    Pour hot mixture into a blender or food processor.

    Add tapioca starch and blend until completely smooth, about 1-2 minutes.

    Add eggs one at a time, blending well after each addition.

    Fold in the grated Parmesan cheese until evenly distributed.

    Spoon batter into prepared muffin cups or onto baking sheet, filling about 3/4 full.

    Bake for 20-25 minutes until golden brown and puffy.

    Remove from oven and cool for 2-3 minutes before serving warm.
