Ingredients
- 150 g pão de queijo (cheese bread), halved
- 200 g mixed spring greens
- 2 tomatoes, diced
- 1 red onion, thinly sliced
- 1 cucumber, sliced
- 2 limes, juiced
- 60 ml extra virgin olive oil
- 1 garlic clove, minced
- to taste sea salt and black pepper
- handful fresh cilantro, chopped
Instructions

1Warm pão de queijo in a 180°C oven for 5 minutes until crispy on the outside.

2Meanwhile, whisk together lime juice, olive oil, minced garlic, salt, and pepper to create the vinaigrette.

3Combine spring greens, tomatoes, red onion, and cucumber in a large bowl.

4Pour vinaigrette over vegetables and toss gently to combine.

5Top salad with warm pão de queijo halves and fresh cilantro.

6Serve immediately while cheese bread is still warm.
