Ingredients
- 1.5 kg beef chuck, cubed
- 3 tablespoons olive oil
- 2 large onions, chopped
- 4 cloves garlic, minced
- 400 ml tomato paste
- 250 ml red wine
- 500 ml beef stock
- 2 bay leaves
- 1 cinnamon stick
- 1 teaspoon oregano
- to taste salt and pepper
- 500 g pasta
- grated Kefalotyri cheese
Instructions

1Heat olive oil in a large pot and brown the beef cubes on all sides, working in batches. Set aside.

2In the same pot, sauté chopped onions until softened, then add minced garlic and cook for 1 minute.

3Stir in tomato paste and cook for 2-3 minutes, then deglaze with red wine.

4Return beef to the pot and add beef stock, bay leaves, cinnamon stick, and oregano.

5Bring to a boil, then reduce heat and simmer covered for 2-2.5 hours until beef is very tender.

6Season with salt and pepper to taste.

7Cook pasta according to package directions and drain.

8Serve stew over pasta and top with grated Kefalotyri cheese.
