Ingredients
- 200g mixed salad greens (lettuce, arugula)
- 200g canned tuna in olive oil
- 2 hard-boiled eggs
- 150g cherry tomatoes
- 1 cucumber
- 100g green beans
- 50g Niçoise olives
- 4 fillets anchovy fillets
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 clove garlic, minced
- to taste salt and pepper
Instructions

1Blanch green beans in salted boiling water for 3-4 minutes until tender-crisp, then drain and cool.

2Hard-boil eggs by boiling in water for 10 minutes, then cool and peel.

3Chop cucumber and halve cherry tomatoes.

4Arrange salad greens on a large plate or in a bowl.

5Top with arranged portions of tuna, eggs, green beans, tomatoes, cucumber, and olives.

6Whisk olive oil, vinegar, and minced garlic together to make vinaigrette.

7Drizzle vinaigrette over salad and arrange anchovy fillets on top.

8Season with salt and pepper to taste and serve immediately.
