Ingredients
- 200g mixed salad greens (lettuce, arugula)
- 2 hard-boiled eggs, quartered
- 150g canned tuna in brine, drained
- 150g cherry tomatoes, halved
- 1 cucumber, sliced
- 8 anchovy fillets
- 100g black olives
- 1 red bell pepper, cut into strips
- 3 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- salt and pepper to taste
Instructions

1Wash and dry the salad greens, then arrange them as a base on a large plate or platter.

2Arrange the hard-boiled eggs, tuna, cherry tomatoes, cucumber, anchovy fillets, olives, and bell pepper in sections over the greens.

3In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.

4Drizzle the vinaigrette over the salad just before serving and toss gently to combine.
