Scallion Pancakes

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup hot water
  • 2 tablespoons sesame oil
  • 1 cup scallions, chopped
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil for frying

Instructions

    Mix flour with hot water and knead until smooth, then let rest for 10 minutes.

    Divide dough into 4 portions and roll each into a thin circle.

    Brush each circle with sesame oil, sprinkle scallions and salt, then roll tightly and coil.

    Flatten each coil and pan-fry in vegetable oil over medium-high heat until golden and crispy, about 3-4 minutes per side.

    Serve hot with soy sauce or chili oil for dipping.
