Ingredients
- 4 eggs
- 100g smoked salmon
- 4 slices white or wholemeal bread
- 2 tablespoons butter
- 2 tablespoons double cream
- 1 lemon
- to taste salt and black pepper
- 1 handful fresh dill
Instructions

1Toast the bread slices until golden brown and spread with butter while warm.

2Crack the eggs into a bowl and whisk together with cream, salt, and pepper.

3Melt butter in a non-stick pan over medium-low heat and pour in the egg mixture.

4Stir constantly with a wooden spoon until soft curds form, approximately 4-5 minutes.

5Arrange smoked salmon on the buttered toast and top with scrambled eggs.
