Scrambled Eggs with Smoked Salmon and Toast

Ingredients

  • 4 eggs
  • 100g smoked salmon
  • 4 slices white or wholemeal bread
  • 2 tablespoons butter
  • 2 tablespoons double cream
  • 1 lemon
  • to taste salt and black pepper
  • 1 handful fresh dill

Instructions

    Toast the bread slices until golden brown and spread with butter while warm.

    Crack the eggs into a bowl and whisk together with cream, salt, and pepper.

    Melt butter in a non-stick pan over medium-low heat and pour in the egg mixture.

    Stir constantly with a wooden spoon until soft curds form, approximately 4-5 minutes.

    Arrange smoked salmon on the buttered toast and top with scrambled eggs.

    Garnish with fresh dill and a squeeze of lemon juice before serving.
