Ingredients
- 4 eggs
- 100g smoked salmon
- 2 slices thick-cut bread
- 25g butter
- 1 tbsp fresh dill
- to taste salt and black pepper
- squeeze lemon juice
Instructions

1Toast the bread slices until golden and crispy, then spread generously with butter

2Crack eggs into a bowl, beat lightly with salt and pepper

3Melt remaining butter in a non-stick pan over medium-low heat

4Pour in eggs and stir gently and continuously until soft curds form, about 3-4 minutes

5Remove from heat while still slightly creamy

6Arrange smoked salmon on buttered toast
