Smoked Salmon and Scrambled Eggs on Toast

Ingredients

  • 4 eggs
  • 100g smoked salmon
  • 2 slices thick-cut bread
  • 25g butter
  • 1 tbsp fresh dill
  • to taste salt and black pepper
  • squeeze lemon juice

Instructions

    Toast the bread slices until golden and crispy, then spread generously with butter

    Crack eggs into a bowl, beat lightly with salt and pepper

    Melt remaining butter in a non-stick pan over medium-low heat

    Pour in eggs and stir gently and continuously until soft curds form, about 3-4 minutes

    Remove from heat while still slightly creamy

    Arrange smoked salmon on buttered toast

    Top with warm scrambled eggs and sprinkle with fresh dill

    Finish with a squeeze of lemon juice and serve immediately
